Time Displaying a Wedding Cheesecake

I’ve just been asked to do a wedding cheesecake and will be doing Rose’s.  My concern is how long the cake can be displayed at the reception.  It will be sandwiched in Buscuit Roulade, covered in buttercream and fondant.  I’ve been googling all morning and am coming up with very little.  Can anyone help me with how long it can be displayed prior to serving?  I know it can’t be out for long, but how long?  And does anyone have suggestions that has done this?

well you can always go by catering guidelines which say that product can be left out for 6 hours as long as it is going to be discarded after.

Being that the custard should be well above 165 degrees while baking,  I wouldn’t be too worried about making anyone sick.

Encourage your bride to order just the right amount so that all the product will be eaten.
