Hi all, I am in the middle of a 3 tier American style wedding cake- the bottom tier is a 10 inch well fed with brandy Fruit cake-,herein lies the problem. I think I have overfed it( it is 7 weeks old)I have marzipanned it and fondant iced it 2 days ago and the icing feels slightly tacky on the sides What if anything can I do.. There is no discolouration on the icing I am just fearful that it wont slice well- any idea anyone..

I’m unfamiliar with this type of wedding cake, I think it’s English, no?  My only thought is to place it on a rack, with no cardboard or anything underneath it, so that the excess moisture can evaporate through the bottom of the cake.

Hopefully others will chime in who have more experience with this type of cake!

Good luck!
