Hi everyone! I have a cake that I need to make for a friend’s daughter - the party is February 4th. I’m doing a white layer cake (Rose’s White Velvet) and filling it with alternating layers of fresh mango filling and mango mousse. I’m trying to find a reliable recipe for mango mousse that will hold up to the weight of being in the bottom layer of a two tier cake (and being covered with fondant). Does anyone have one they can share?
