Just wanted to share the cake I made for Valentine’s Day. It is the Banana Refrigerator Cake from RHC. I substituted the whole eggs with egg whites and substituted the sour cream with fat-free Greek yogurt. I omitted the cream cheese in the frosting and instead made it with Vegan margarine, soy milk, vanilla and confectioner’s sugar.
The base cake was frozen prior to frosting. When I did frost the cake, I was able to taste a bit of the cake top and the banana flavor had been intensified.
This cake has Zero mg/ cholesterol. I had a big, fat piece.
