This is a slice of the blackberry chocolate cake we had for Valentine’s Day. I’m sorry, I didn’t get a picture of the whole cake!
It’s sort of a blackberry Maria meets RHC chocolate valentine cake with a little influence from Zach’s blackberry charlotte. Put another way, my daughter loves blackberries and my husband loves chocolate, so it seemed appropriate!
It was a heart-shaped genoise au chocolate syruped with blackberry puree syrup. The filling is blackberry cloud cream with a little cassis to amplify the flavor (the blackberry puree, made from frozen blackberries, was very subtle, though nicely tart). The ganache frosting was a blackberry version of TCB raspberry ganache, with double the quantity of puree and cassis for the liqueur. It was a touch grainy because I didn’t do a perfect job of straining the puree. And the top was covered in fresh blackberries. It all worked very well and received good reviews from family.
