I have found what seems to be real cake flour and in bulk. Can someone please tell me if it is real cake flour?, and can be used as is, instead of needing to be microwaved?. By the sounds of it it is, but I would love some confirmation from an expert!.

I’m no expert Skyla but….also being an Australian and having been on the blog for a little while I think you will find that whilst this product appears to be cake flour (lower protein wheat flour) it is still unbleached (bleaching is banned in AU).
...and therefore to achieve the denaturing of the flour (to achieve a similar end product to using bleached cake flour) this would still be a candidate for microwaving.

If it isn’t bleached…which according to the link, it is not…it won’t behave properly in the recipies calling for cake flour.  Bleaching is essential…it changes the shape of the particles of flour and this process is necessary for the flour to combine properly with the butter.  There is tons of info on this in the blog.

Thanks for all of your help. I am going to use the anchor cake flour for the time being, and microwave it, as per the quick cheats instructions (which I hadn’t seen before). If that goes well I will order a big bag from the above company and microwave it to.
