Using Champagne Mangoes in season, I decided to use mangoes in Rose’s Fruit Cloud recipe to fill my charlotte russe. It was divinely refreshing and light. If I had enough time, I would have made my own lady fingers, too; although I made the charlotte base from scratch using Rose’s lady finger cookie recipe. What I will do differently next time is to fill the charlotte a bit higher, pipe whipped cream on top, and trim the bottom of the cookies next time for easy assembly next time. I used store bought savoiardi cookies for the sides instead.
