CAke Flour vs. All Purpose Flour

Hi All,

I have heard that some people substitute Cake Flour for AP flour in cake recipes; even when they call for AP flour.

I know that Cake Flour has less gluten than AP and produces a lighter crumb, but has anyone made the direct substitution and does it work?

I usually just follow exactly what the recipe calls for, but have also heard that its always best to use Cake Flour.
