CAke Flour vs. All Purpose Flour

Hi All,

I have heard that some people substitute Cake Flour for AP flour in cake recipes; even when they call for AP flour.

I know that Cake Flour has less gluten than AP and produces a lighter crumb, but has anyone made the direct substitution and does it work?

I usually just follow exactly what the recipe calls for, but have also heard that its always best to use Cake Flour.

I have made the substitution and it does work…..for some recipes.  You’ll just have to experiment with each recipe that calls for AP flour.  Probably the smaller the pan, the more likely it is for the cake flour to succeed, because there is less need for structure.
