I live in southern ca. I’m using cake flour non self rising. Oh well I have to just use a vanilla cake I guess with lemon butter cream and curd don’t have time to keep trying it out. But I will conquer this one day like I did pound cakes.

Obviously, your occasion is past, but we’re currently having a discussion about brands of baking powder (http://www.realbakingwithrose.com/index_ee.php/forums/viewthread/4509/), and one person has reported cupcakes bubbling over.  Take a look—maybe this will have something to do with your spilling woes!
