I would like to make a mango mousse cake for my parents’ 50th anniversary this friday. We usually get this cake from the local bakery and everyone loves it but I and my daughter want to try and make it ourselves this time. I could not find any recipe on the forum. Please help!
Which cake will go best with it - sponge or genoise? What proportions to use for the filling - similar to the strawberry cloud cream in TCB? What about a glaze?
