As of today, when a chocolate cake is not an experiment…it must be F&W’s Mom’s or Rose’s DCP. Somehow my pantry was totally lacking cake flour (except King Arthur Unbleached (also unopened). ((Do not know how I let that happen).
You see here the result of using All Purpose Flour…there is a dip just as Rose says there would be. I made Raspberry Ganache because I had some raspberry sauce from a recent cake. And, I wanted to practice the Lacquer Glaze again…... Of course, working in the kitchen until 2am results inpatience… I poured at 94 degrees instead of 82.
I am having a tea on Friday and will likely bake DCP or a small DCP and a small Mom’s.
