I am making my daughter a little mermaid cake for her party on sunday, when should i make the chocolate sponge? i dont want it going stale, but got lot of icing to do.

the sponge I do (Rose’s Biscuit de Savoie or Genoise), stays fine for 1 week, if airtight and refrigerated. So place it so, after each time you call it done for the day icing it, so you won’t have to do all the icing in one day!
