Julie, I absloutely love Roses’s Spike Cake from The Cake Bible.  You can finish it any way you wish as the milk chocolate frosting can be piped.  It’s absolutely yummy and chocolatey!

The Chocolate Fudge Cake in The Cake Bible is to die for!  Very moist and a deep dark brown color.

Triple Chocolate Cake is my ultimate take (and complication).  There is no other chocolate cake as tedious to execute.  If you have the time go for it!!!  (or discipline to do it in parts as I always do).

It is the ultimate leavening free sponge cake, so dense in chocolate, moistened with frangelico syrup.  Then filled with light ganache.  And later ultimately covered with a hard shell of chocolate and praline.

I haven’t found one person short on fulfilling any chocolate fantasy when eating this cake:  some people like chocolate cake, some like chocolate cream, some like hard chocolate, the Triple Chocolate Cake has all three.

My husband doesn’t go for anything very sweet, so I make him the Genoise au Chocolat, which is fairly low in sugar.  His favorite way to eat it is with Grand Marnier syrup and chocolate ganache with grand marnier. 

Sometimes I make it with Mousseline BC with extra grand marnier if I want a pale frosting to contrast with the dark cake, but his fave is definitely the ganache, which is much easier to make.
