Milk chocolate ganache storage

I know cake bible says 3 days refrigerated bu I forgot and it’s almost a week in the fridge now. It looks fin however do u think it’s safe to use or should I start all over again ?

I think the suggestions are based upon flavor-retention/texture principles and/or published safety standards.  In this case, I’d say it’s a safety standard.  Personally, I’d use it in a without hesitation (I keep my fridge on the coldest setting).

Taste a small amount and see what you think.  Possible issues are the cream spoiling, cocoa butter crystals growing and making it grainy, or the chocolate flavor mellowing.  Chances are it’s totally fine. smile  If it’s grainy, you can re-warm just to a liquid state and let it cool gradually to try to restore the smooth texture.
