Butter Cream - Storage, freezing and shelflife.

Hi

This may have been asked before but, what in everyones experience is the best way to store buttercream (without freezing), how long can you freeze buttercream for and defrost times and finally without freezing how long are cakes containing butter cream edible (just stored in a fridge or cold store). We get asked this question alot so I thought best put the question out to my forum buddies. smile

Depends on the recipe.  A shortening and sugar-based recipe will be different from a french egg yolk bc, etc.  The Cake Bible has complete storage information for all its buttercreams.
