Here is a cake I baked for my nephew’s second birthday. I used the banana cake from the Tropical Wedding Cake for the two 12 x 2 layers— baked in two 9 x 13 x 2 sheet pans. I filled it with the Dreamy Creamy White Chocolate Frosting, and frosted it with the White Chocolate Cream Cheese Buttercream from TCB (because I was worried that the Dreamy Creamy frosting was too soft for frosting the outside of the cake). I had initially planned to cover it with fondant, but at the last minute decided against that because I don’t think fondant is very kid-friendly in terms of taste. So… I did the unthinkable and added a layer of blue swiss meringue on top of the cream cheese frosting (which is off-white) and decorated the cake as you see below. I was worried about mixing all these frostings together… but the end result worked. Everyone LOVED the taste and I got great feedback, so I am very pleased! I couldn’t have done it without Rose’s cookbooks and this forum!
