The other day, I visited an amazing cake shop (I love baking cakes and there is nothing better than a home baked cake but sampling new cakes is equally important to me :D so that i can try making them at home
) Ok.. so I was saying.. They had an amazing butterscotch cake. The sponge bit of the cake was amazing but what got me excited was the icing.. it looked super glossy, it was mildly sweet, it was pale lemony yellow looking and felt buttery to touch. It was super light. It did not look like a regular buttercream. It looked as if it had a lot of butter in it but as I said.. it has a sheen to it and buttercream icing has a matte finish look. I know that there are many buttercream icing recipes which are glossy which probably have egg whites in them but this one looked more like room temperature butter which has been too soft.
I’d love to make this icing at home.
