why is my buttercream gritty?

I made chocolate cupcakes yesterday..
I made a pink strawberry buttercream icing for it.
The problem is that, the icing tasted gritty! It was really frustrating! I used powdered sugar.. i also added a little more milk to it in an attempt to melt the sugar..but nothing worked!

This is pretty common in recipes that use powdered sugar.  I recommend the buttercream recipes in The Cake Bible or Rose’s Heavenly Cakes, they are never gritty and use hot sugar syrups to produce perfect textures.

Sometimes, priyanka, the grittiness will be gone the next day, as the powdered sugar sometimes dissolves with time.  If you used butter, there’s a better chance of this happening than if you used shortening or margarine.  Good luck!  Also, agreed re what Julie says—Rose’s buttercreams are great!

Italian buttercream will not have grittiness…  I always add warm milk after I add all the sugar if I use the normal buttercream recipe.
