Hello,  Does anyone know of a real good coconut cream pie recipe that Rose would approve of ?  Unfortunately there isn’t one in the Pie Bible.  I looked in the variations section of the “pastry cream” pg 560.. (nothing with coconut)..  In RHC book there are cheesecake and butter cakes with coconut. but i am uncertain if these can be adapted to suite a coconut filling for pie…  Please help !!!!  Thank you

No…but there is a deadly coconut ice cream pie in the PPB!!  Delish!  What about making a pastry cream with coconut milk?

I’ve never made it, but Joanne Chang has a recipe for a coconut cream pie in her book Flour.  I’ve found many of the recipes to be decent so you may want to give it a try!

I’ve heard that a lot of pastry chefs make it with pastry cream, to which they add shredded coconut.  If you can find unsweetened or fresh coconut to use, that might make it the best it can be.

I don’t have my book with me…but there is an absolutely delicious coconut cream pie recipe in the Cook’s Illustrated book that is simply called ” Baking “.  Next to Rose’s books, I use it most often, and that recipe is killer.

I recently made a coconut cream pie, substituting 1.5 cups of the milk called for in the recipe with unsweetened coconut milk (just as Sherrie suggested above). I also added 1.5 cups of coconut to the cream, just before filling the shell. It turned out well and made a delicious filling. I modified the two recipes for coconut cream pie in Susan Purdy’s book “As Easy As Pie.”

The coconut was sweetened, just the bagged variety from the grocery store. It was not fresh coconut.
