I’m starting my Christmas baking for customers this week and with Christmas on a Tuesday, pick ups are becoming a problem. I make a carrot cake with Rose’s Cream Cheese Buttercream and have frozen the cakes alone successfully, but I’m wondering if I make and frost the cakes, freeze them, and have to deliver some on Saturday or Sunday, (will be gone on Christmas Eve), will they be okay. I was going to tell the Saturday and Sunday deliveries to put them right back in the freezer and take them out Monday morning.
