I would like to double the Genoise Classigue from the CB to make two 9 inch layers..  That would be a total of eight eggs to beat.. Would my 5 qt mixer be large enough to handle the volume ??  Thanks in advance

Hi Pauly, I recently made the Genoise Classique sponge and from my experience I would say to make it in two seperate batches. I don’t think that there would be enough capacity in the 5 qt mixer to take 8 eggs. Hope this helps.
