Small cheesecake

I am baking the Cordone Rose Cake in a 5 x 3 pan instead of the 8 x 3 in the recipe .. I will fill with batter proportionally the same height in the small pan.. Would the baking time of 45 min have to be adjusted ?  Anyone have any comments ?  Thanks

Hi pauly!  Welcome.  I baked a 6” pumpkin cheesecake for about 40 mins. (the internal temp is 150F).  I left it in the oven for about 1 hour after and it was great!  Best cheesecake I’ve made in awhile…That said, I’ve had issues with larger cheesecakes being underbaked so it could be my oven.  I recall Rose saying that you don’t need to adjust temperature that much.  Check out the wedding cheesecake recipe in TCB as I think that’s where I encountered that information.
