Classic Carrot Cake

I made the Classic Carrot Cake with Dreamy Creamy Frosting from RHC and I must say it is the BEST carrot cake I have ever tasted. My husband loved it and he is VERY particular about his carrot cake! This is now one of my favorite cakes from RHC.

That’s a beautiful cake you made there, adrie! And it looks like you leveled your cakes before assembling the cake. They look the same thickness and a real nice job with the frosting, both the filling and the outside. I really like the carrots you piped on the top, too. Nice work!

PS. I actually didn’t level the cakes.. I weighed the batter before baking in the pans and they baked flat and even!

That’s amazing they came out that flat without leveling them. Did you use baking strips around the pan and/or use one of those heat nails? I’ve read that even for smaller cakes using the strips and nails helps achieve an evenly baked and level cake. Anyway, whatever you did it looks great!

Beautiful Cake!!  I, too, love the carrots, and I, too, am amazed your layers came out that flat!!!!  Gotta love it when that happens!!!
