Freezing Caramel

I had hoped to make my daughters birthday cake ahead of time and freeze it.  I have done this a few times very successfully but she wants a layer of caramel.  I usually make the caramel from the Turtle Cupcakes from RHC but I wasn’t sure how it would fair during thawing.  Any input?  Thanks!

Hi, MC!

I’ve made this (and other) caramel and used it as a layer and frozen it with no problem.

In fact, I used it in this (http://www.realbakingwithrose.com/index_ee.php/forums/viewthread/3714/) cake.

Caramel layer - yum!
