I just made these a few minutes ago.  They are not filled yet.  I am filling them with Rose Water buttercream… IMHO,  I like the feet flat,  like a “wall” and not ruffles sticking out from the bottom.  I admire the Laduree Macarons.  Theirs have “wall” for feet

Those are beautiful!  I like those feet better, too.  My most recent batch have ruffles—but I’m just glad they have feet at all!

Any kind of feet will be fine.. what I noticed is that,  if I fold them a little more,  this is what I get.  They will look a little flatter after I pipe them,  but this is the result I get which is what I prefer, but the ruffled feet are also great.  Really,  any feet is always welcome

Thank you!  I will slightly over-fold my next batch!  Macarons are addictive!  You will have to try some of Rose’s fillings in yours.  She has some seriously good ones!

You’ll find them in The Cake Bible (as individual items) and Rose’s Heavenly Cakes (as components of “assembled” cakes)—both of which are probably available in your library.  You’ll also find some scattered about various recipes here on the blog (as recipe components)—blog, as opposed to forum, but here on this same site.
