Freezing Strawberry Maria

Even though it is not specifically stated in TCB, is there any reason the Strawberry Maria couldn’t be frozen?  I suspect the cloud cream may be the only issue, but since it is stabilized with gelatin, I think it may work.  Has anyone frozen this cake before?  I’m planning to make it for an auction, but I want to make something I can freeze.

Sherrie, the cloud cream is whipped cream flavored with strawberry puree/jam and stabilized right? I’ve never frozen this particular cake or the cream but have frozen whipped cream stabilized with gelatin and it worked well. I don’t remember what cake it was but I did freeze the leftover that was already cut into slices. They thawed beautifully (maintain shape) and tasted good. Hope it helps!

I think it will freeze just fine. I love this cake, made it several years in a row for my birthday smile
