Maaaaaark!! (and friends)  Getting ready to make no knead loaves…help?

OK I made my first batch 2 days ago.

It was super easy and I loved the entire method.

problems (as i see them)

my crust didn’t stay crusty after cooling.

the crumb was super dense with small holes.

the flavor was blah.


I’ve got another batch of dough in the fridge.
who can advise?

i just can’t do it!!! i’m sooo frustrated. my bread is dense and chewy and flavorless. what i want is that creamy crumb in the center. is that even possible with the no knead technique??
