Cherry pie question

Has anyone tried using the technique described in the peach galette and apple pie recipes with sour cherries?

Do you mean macerating the fruit and reducing the juices?  If so, I have tried it and it works.  I did it in the microwave to avoid caramelizing/browning the juices, which can create bitterness.  I reduced both the corn starch and the sugar, I’m sorry but I can’t seem to find where I wrote down how much.  It produces a very concentrated cherry flavor.

Thanks very much.  Yes, it was the macerating the fruit and reducing the juices technique I was asking about.
