ginger slices

here’s one for the Southern Hemisphere folks. On a recent, wonderful trip to New Zealand, we enjoyed, among many things, a bar cookie called ginger slices. The bakery version has a thick layer of ginger frosting with an almost fudgy texture. The recipe a friend found for me in Edmond’s has a thin glaze. Is this more authentic? And how do the bakeries do theirs? ‘Cause authentic or not, it was yummy.
