The best cheesecake i have ever had and made is by CI and is in their june 2006 issue i believe.
It requires no water bath, and is the best version of a new york cheesecake that I have ever come across. A true new york cheesecake has a nut brown crust on top, which cannot be achieved with a water bath. the center is cool and creamy which moves to satin, velvet, and suede toward the outer edges of the cake. It is divine and requires no topping whatsoever!
