I’m new to all this. I love baking and have been taking courses at George Brown in Toronto. I have bought Rose’s Cake Bible… the best cookbook I have ever read and used.
My friend asked me to make her wedding cake. We tried out several recipes from the Cake Bible. She loved the Yellow Downy Cake and the NeoClassic buttercream.
In reading the book, the recipe for Neo Classic Buttercream says it can only be at room temperature for 6 hours. Finally my question, if I prepare the cakes and used the Neo Classic Buttercream as a filling and cover with fondant the day before the wedding; do I need to refridgerate the cakes until just prior to the ceremony OR can I leave them in a cool location?
