Our bakery, Ella Vanilla, will be making it’s first appearance at our Farmer’s market, selling cupcakes by the dozen. I’m so excited!

You will have no problem introducing Southern Californians to the delights of cupcakes made with high-quality ingredients. You are right when you point out that a lot of people here think good food comes from a chain and that shortening reigns supreme. Best of luck to you. I hope you develop a devoted following of cupcake lovers.

I’m sure you’ve got lots of fabulous ideas, but my favorite cupcakes that I’ve made recently are chocolate butter cake with caramel silk meringue BC, which I divided up into sub-batches of caramel, burnt orange and coffee-caramel.  Also, I made a cupcake version of blueberry swan lake that was excellent.  I cut a cone shape out of the top of the cupcake, filled with blueberry topping, and piped rosettes of lemon BC around edge of blueberries.

Patrincia, glad you are making taste of the great frostings and cakes that are now so family to myself!  Silk Meringue bc is a great tasting one plus great use of yolks.

I am actually very nervous because I am doing a test run for the first time in a commercial kitchen TONIGHT for 200 cupcake order for a wedding this weekend. the intent behind working in a commercial kitchen is to obtain a health license in order to sell at the farmer’s market!

Thanks for all the well wishes!

It wasn’t a wonderful experience, but we survived. i spent the entire night before making product as
i had had so much trouble working in the new kitchen.

we sold about 18 dozen cupcakes.

We are going back this weekend and have some plans to be more profitable. by law, we aren’t allowed to sell singles or sample anything that
isn’t packaged before we get there. but we are going to break the rules this weekend and do just that!

I’m not sure whether the weather will be warm when you do your first farmers market but make sure you have something to transport and display your products at legal temperatures otherwise you could have some mean government official on your back or worse, food poisoned customers! This is particularly important if you have high risk products such as cream.

it’s a hard slog, to be honest. this market isn’t well attended, but we are hoping to become a destination for our customers who don’t want to wait for a special occasion to have our product. we are encouraging people to email their special requests and pick them up at the market!
