I’m sure you’ve got lots of fabulous ideas, but my favorite cupcakes that I’ve made recently are chocolate butter cake with caramel silk meringue BC, which I divided up into sub-batches of caramel, burnt orange and coffee-caramel. Also, I made a cupcake version of blueberry swan lake that was excellent. I cut a cone shape out of the top of the cupcake, filled with blueberry topping, and piped rosettes of lemon BC around edge of blueberries.
