This was inspired by Rose’s Heavenly Peach Galette. The idea for putting jam under the fruit was from Dorie Greenspan’s Summer Fruit Galette, which I made as part of “Tuesdays with Dorie.”
My own ideas—rolling the dough thinner at the edges, and using an apple-cranberry juice concentrate to moisten the apples and make the jam. (I used Old Orchard Cranberry 100% juice blend.)
