Pastry Cream - how far in advance to fill a cake

Hi Everyone -
  I have a baby shower cake for this Sunday to be filled with pastry cream and fresh strawberries.
Does anyone have a recommended time that i can fill the cake and cover with fondant where i won’t jeopardize the quality of safety of the cream and strawberries?

I would say the day b4 if possible, but keep refrigerated.
