Salted Caramel + Ganache Double-Stuffed Macarons (RHC Mud Turtle Cupcakes)

Hi, all!

Haven’t been around in a while—haven’t been baking much.  Super busy at work!!!!

Over the weekend, I did make some macarons for a friend’s birthday, and I filled them with the sticky caramel and ganache from Rose’s mud turtle cupcakes in RHC.  The only change I made was to add 1t. salt to the cream for the caramel.  Seems like a lot for that little caramel, but it wasn’t (with all that other sweetness going on).

I haven’t had one yet, but I expect it will taste a bit like a non-chemical Twix bar!  I’ll know tomorrow!

Glad to see you Anne.  I too have been super busy and have not had time to bake very much.  But those look out of this world.  Chocolate and caramel are two of my favorite flavors.  You must report back after your taste test.

Thank you, everyone!  Yes, to me they tasted like Twix-es!  One friend said they were her fave macarons (of mine) so far.  The woman I made them for said they looked like little hamburgers.  In all, they were very popular!  This is a super-yummy combo!
