I am going to make a batch of cinnamon rolls next week and wanted to get the glaze/frosting ready ahead of time, could anyone tell me if they are ok to make a week in advance and how long they will keep for in the fridge? I am making a maple syrup glaze (ingredients: confectioner’s sugar, maple extract and milk) and also a coffee frosting (ingredients: confectioner’s sugar and coffee.)

From a food safety standpoint, the two glazes you mention should be fine for a week in the refrigerator.  The sugar will preserve the milk, but for extra safety, check the date on the milk that you put into the maple glaze, it should be after the time you will use the glaze.

I don’t know if these types of glazes will crust or harden when stored.  I imagine that they probably need an airtight container without a lot of extra airspace to prevent hardening.
