Storage of Ganache?

Hello Everyone!

  I made ganache (2 cups of heavy cream and 1lbs of Hersey chocolate).  I am using the ganache to crumb coat my cakes before the use of fondant.

What is the length of time that i can store the ganache (both for fridge and freezer)?  Also do i just “reheat” to get the correct consistency, after storage, to use?

Hello again littlelottie

If all you have is cream and chocolate, you may store this up to two weeks in the fridge.  I think about 5 months in freezer.  I would just take it out in time to come to room temp and right consistency. I do not recommend microwave or other heating.

I have a wedding coming up on 13 Oct and i wanted to make the ganache a week or so before hand - looks like i will be “safe to”
