Chocolate Covered Strawberry Cake

Hey everybody!
I’m making said cake today [it’s 13:00 around here] for a birthday tomorrow evening. Actually I’ve already made the white chocolate whisper cakes so just the mousseline and the frosting!

Can I make & assemble the cake in its entirety today, and store in the fridge? It’s about 24 hours away [the b-day].
It’s quite warm here during the day.

From a food safety standpoint refrigerating would be fine. I’m not sure about the frosting and whether or not it would retain its gloss if refrigerated.  You could put a small amount on a spoon and refrigerate and see what happens.  Sometimes gloss can be refreshed with gentle warmth (tricky- you don’t want to melt it).

Thanks! I was indeed worried about the texture of the chocolate frosting.
