I was inspired by Anne talking about shortbread cookies yesterday that I made these about two hours ago. 
Alfajores Kisses, shortbread cookies filled with Dulce De Leche inside then baked. 
The dough calls for 1 1/2 c cake flour + 1/2 c corn starch.  It has honey, vanilla, 1 egg &  1/2 cup powdered sugar.

I am very happy with results and from now on this is on my Christmas to-bake cookie list…  The corn starch made the dough stayed in shape although I stick the shaped cookies in the
freezer for 20 mins b4 baking for I was worried that they might spread like crazy,  and it helped.  The corn starch made the dough airy inside/lighter and crunchy on the outside w/out making the entire cookies
hard like biting into a rock and no after taste.  the Dulce De Leche that was “entomb” inside remained creamy.  and no I did not make that STARBUCKS snow globe.  I got that from SB like 3 years ago at Christmas.

Those are beautiful!  And they sound delicious.  What a great twist on the “filled” cookie!
