I don’t have the recipies with me, but There is a baking book put out by cooks illustrated (It is big and yellow/orange…it has recipies for crispy chcolate chip cookies and crunchy chocolate chip cookies…the difference appears to be in the amount of spread as they bake….the “crispy” ones spread more so they get crisp more easily.

Corriher.  My favorite chewy choc. chip cookie recipe is found in that book (she calls the recipe “thin”, but they are indeed chewy).  She has a wonderful section on understanding how the various ingredients will give your cookies different results.
