so here is my question with a whole thread devoted to it, a generic question really, about eggs.
How should they be used to make a cake fluffy and light? What determines the number of eggs I should use?

What determines the number of eggs I should use?

If you’re making your own recipe, the reality is probably trial and error. Keep adding eggs until you get the texture and flavor you like. The effect on fluffiness probably has mostly to do with the water it provides, but the emulsifiers in the yolks likely has some effect. You could boost the fluffiness by whipping the eggs separately, or even just the whites separately.
