Oh Goodness…the Flaky Cream Cheese Crust

I made it w/a pecan pie. That is amazing! No dryness whatsoever! My husband hates crust on all things and ate it up. My kids ate the crust!

May I also direct your attention to the sour cream crust on p. 24-25. I find it is equally delicious as the cream cheese pie crust, but much easier to put together because you don’t have to mess around with ice water and vinegar.

I love the cream cheese crust too! I make it with my food processor and it’s so easy and delicious.

One tip—if you use unbleached all-purpose flour for this crust, it may turn out a bit tough. If you don’t want to use a bleached flour, try blend of half unbleached pastry flour and half unbleached all-purpose flour. That has worked well for me.
