More catching up -  When it comes to bread, all I have ever made are dinner rolls and croissants and that only once or twice a year.  However, I have to rarely buy packaged bread as it cost so much (for what it is) ....bland/mediocre.  As a Craftsy addict, I finally watched the Artisan bread class from Peter Reinhart…. and the first thing I made—dinner rolls. I had to freeze part of it.  Great fun.
