After years of owning RHC I finally bought the Elegant Heart Pan and baked this lovely cake. I had to modify it because my family doesn’t really like lemon and I had no poppy seeds in the house. I reduced the lemon zest from 5 tsp to 1 tsp in the batter and I reduced the lemon juice for the glaze from 94g to 30g and replaced the difference with water. This cake did not suffer at all from the changes. It is moist, tender, and oh so delicious. If I am invited to a gathering, this cake is coming with me. It is irresistible.
