You all know I am addicted to Craftsy….. one of my classes is Classic Croissants. I’ve made croissants once or twice before but not necessarily with so much effort on detail. I used the new Platinum Yeast which may be too much for croissants or this recipe. But I had fun and look forward now to trying Rose’s recipes for laminated dough.
The first photo is after (1) mixed the dough (2) after first rest (3) is after 3 folds/turns (4) are frozen croissants I took from freezer to photograph. they have a little damage. But, I am pretty much avoiding packaged bread (seems bland/mediocre). These are so good, I may have to ban myself from baking bread too. I failed to capture after shaping before proofing/after proofing photos.
My mother is at that stage where she hardly eats anything…. so I can fill these croissants with something nutritious and get her to eat. ( She has been asking for doughnuts…....I am in trouble)!!
