The “Tuesdays with Dorie” group was baking Rugelach back at the beginning of November and there were lots and lots of variations. Some people even made savory rugelach. These little guys lend themselves well to almost any filling, and many kinds of shaping. Just don’t add too much filling, or it oozes out all over the place instead of staying (mostly) inside. Really runny fillings are a bad idea, too.

By the way, Dorie Greenspan’s recipe for Rugelach is fairly similar to Rose’s in “Rose’s Christmas Cookies.”
