For years I made one bread. Challah. In about ten days I taught myself the rest. I do not like cookbooks or even instructions. If I don’t do it myself, I don’t learn.
My wife maintains a copy of the bread bible so I admit, I gleaned important tips from Rose.
I don’t measure anything with any accuracy. I bake entirely by feel.
My first sour dough and pumpernickel are remarkably good. Bagels and bialys too. All I have left is Eastern European Rye and baguette and my bread arsenal will be complete.
