super quick, easy ganache topping

hey everyone,
just wanted to share another tip. this time for a ganache-like topping that you can make in the microwave.

we came up with this idea when we wanted some chocolate topping for our ice cream.

i don’t usually have heavy cream, but i always have half and half for my coffee.

you take a handful of chocolate chips and toss them into a large pyrex cup
cover with half and half just to the top of chips, you should still see the chips poking thru just a bit.

microwave 25 secs at a time until milk is hot enough to melt chocolate.

stir and pour. it’s not as light as the full ganache and you can’t make a truffle from it! but it’s great over ice cream and other desserts. i’ve been using it on mini pound cakes as a glaze and it works out great.

i would still make a real ganache for cake but as a quick glaze this is working out great.

what a clever method, my take is that milk, canned evaporated milk, dry milk, and even butter will work.  either base you choose is still real chocolate and real baking!

so NO to the store bought bottled fudge for ice creams, just micro your chocolate!  it is a good idea to never run the micro pass the full melt point since the waves effect remain plus 10 seconds after turningit off an also chocolate keeps melting pass 1 minute from its own residual heat.
