I have a Question that perhaps someone can help me with.  Has anyone used magic cake strips with a genoise?  I Have used the magic cake strips many times with butter cakes but never tried with a genoise.  I have had good success with foam type cakes (genoise, biscuit, etc) but why not get a little extra lift if you can?  Anyone given this a try?

That is a great question and rather often asked.  For foam cakes, baking-powder free cakes, the strips are not necessary.  But won’t hurt.  If you use them, I would increase the oven temp plus 25oF for the first 15 minutes of the baking, then turn down to normal temp.  These cakes need a initial high heat to set so they don’t collapse.
