Hi, I was wondering what the official name was for dry butter..I think it’s supposed to be “bersec” although I’m not sure of the spelling.  I’m in Dallas, Texas and was wanting to get some for my puff pastry recipe.

Thanks
Lulu

It is beurre sec, but it will be hard to find.  You will probably have to substitute a European or European-style butter, such as plugra—that will be closer than using regular American butter.
